K\u00fcchenchef Jordi Cant\u00f3 geht mit seiner neuen Men\u00fckarte \u201eVegetaci\u00f3\u201c einen weiteren Schritt dahin, Althergebrachtes in die Modern zu \u00fcbersetzen: Eine vegetarische Slow-Food Variante steht zur Wahl und die G\u00e4ste k\u00f6nnen ihr Men\u00fc selbst zusammenstellen.<\/strong><\/p>\n

Das Sa Clastra im Castell Son Claret f\u00fchrt mallorquinische Traditionen in die Zukunft. Im Innenhof zeugen ein Brunnen, historische Mauern und eine Sonnenuhr von 1888 noch von einer fernen Zeit, die hier heute kulinarisch neu interpretiert wird.<\/p>\n

Seit der Er\u00f6ffnung des Restaurants 2021 verwirklicht der mallorquinische K\u00fcchenchef Jordi Cant\u00f3 mit seinem Team das ambitionierte Ziel, die \u00fcber Generationen hinweg \u00fcberlieferte kulinarische Tradition Mallorcas mit lokalen Produkten zu neuen Gerichten zusammenzustellen. \u00a0Um dem Gast so viel Gestaltungsfreiheit wie m\u00f6glich zu geben, wurde die Speisekarte mit den Men\u00fcs \u201eTradici\u00f3\u201c (Tradition) und \u201eTransici\u00f3 (Wandel) j\u00fcngst um das vegetarische Men\u00fc \u201eVegetaci\u00f3\u201c (Vegetarisch) erweitert. Dank des modernen Men\u00fc-Konzepts \u201eAl Gusto\u201c k\u00f6nnen G\u00e4ste ihr eigenes Men\u00fc aus dem vielf\u00e4ltigen Angebot der K\u00fcche gestalten und somit die Vielfalt an Aromen kosten.<\/p>\n

Der geb\u00fcrtige Mallorquiner Jordi Cant\u00f3 gewann Erfahrungen zun\u00e4chst in der eigenen Familie, sp\u00e4ter lernte er von den besten K\u00fcchenchefs Spaniens, zuletzt von Fernando P. Arellano, unter dem er als Souschef im Zaranda, dem ehemaligen Zwei-Sterne-Restaurant des Luxushotels, arbeitete. Mit besonderem Augenmerk auf erstklassige Produzenten und Lieferanten gelingen ihm erlesene Kreationen, die nicht nur dem Erbe des besonderen historischen Ortes gerecht werden, sondern auch ein wichtiger Bestandteil der Inselkultur sind.<\/p>\n
